Smoothie bowls are my go-to breakfast these days. They are so simple to make and depending upon the ingredients are a nutritional powerhouse. Also who doesn't love a pretty and colorful bowl to start your morning? This version is made with beets and frozen blueberries. The purple color is amazing and I love the earthy addition of the beets. Feel free to top your bowl with any combination of nuts, seeds, and fruits. You can have fun playing with the ingredients. My kids love the fun fruity bowls also and it is a good way to sneak in veggies. Enjoy!
Beet and Blueberry Smoothie Bowl
1 small cooked and peeled beet
1 cup frozen blueberries
1 cup rolled oats
1/2 cup soy milk
1/4 cup cashews
Cashews, hemp seeds, and blueberries for topping
Blend all of the ingredients together except the toppings in a high speed blender. Pour into a bowl and add toppings. Enjoy!
